Mango and Ginger Salsa

1 large mango, peeled and chopped
2 inch piece of ginger, peeled and grated
1 teaspoon brown sugar
1 tablespoon tarragon, finely chopped
Juice of 1 lime

Combine the chopped mango, grated ginger, sugar, tarragon, and lime juice. Store in the refrigerator until required.

Serves 2-4.
