Feta Dressing

2 tablespoons white wine vinegar
1 teaspoon honey
1 garlic clove, minced
1/2 teaspoon Dijon mustard
1/4 teaspoon salt
1/8 teaspoon freshly ground black pepper
1/4 cup olive oil
1/4 cup crumbled feta cheese
2 teaspoons minced fresh thyme

Whisk together first 6 ingredients in a bowl; slowly whisk in olive oil.  Stir in feta and thyme.

Makes 1/2 cup.
